About Teriyaki Jerky Seasoning
Sweet soy teriyaki with garlic, for jerky with a gentle Asian-style twist. One bag and its cure pack make 25 lb of beef or venison jerky by brine, dry rub or ground and formed.

How to use
How to use
One bag and the included cure pack are sized for 25 lb of lean meat.
Brine: slice 25 lb lean beef or venison 1/4" thick. Whisk the seasoning and cure pack into 1/2 gallon distilled water and soak the meat 12 hours, refrigerated.
Dry rub: mix the seasoning and cure pack. Lay the sliced meat flat on plastic wrap, shake on half, flip, shake on the rest, cover, roll up and refrigerate overnight.
Ground and formed: grind 25 lb 100% lean beef or venison through a 1/8" plate. Mix in the seasoning, cure pack and 1 cup distilled water until very sticky. Refrigerate overnight, then form strips with a jerky cannon.
Smoke: preheat to 145°F with the dampers open and dry 2 hours. Close the dampers to half, raise to 160°F and smoke 4 hours, or until you get the texture you want. The drier it gets, the more shelf stable it is.
