Game Day Sweet Heat Wings

Dry-skinned wings, cooked low on the cool side of the grill and crisped over the fire. No sauce needed.

These are grilled wings with crisp skin and no sauce to mop up. Sizzlin' Sweet Heat brings the sweet and the kick in one shake. Dry the skin ahead and they'll crackle.

Ingredients

Serves 4-6 (about 3 lb wings). Time: about 45 minutes on the grill, plus 1-12 hours to dry the skin.

  • 3 lb chicken wings, split into flats and drumettes, tips removed
  • 1 tablespoon baking powder (not baking soda), for crispier skin
  • 1 tablespoon vegetable oil
  • Frisco Sizzlin' Sweet Heat BBQ Seasoning, a good even coat, plus a little for finishing
  • Celery and carrot sticks and a cool dip, for serving

Steps

  1. Pat the wings very dry. Toss them with the baking powder and set them on a rack over a sheet pan. Refrigerate uncovered 1-12 hours so the skin dries out.
  2. Toss the wings with the oil and season them well with Sizzlin' Sweet Heat.
  3. Set up the grill for two-zone heat: one side hot, one side with no fire. Aim for 350-375F on the lid thermometer.
  4. Lay the wings on the cool side, close the lid, and cook 30-40 minutes, turning once halfway.
  5. Move them over direct heat for the last 3-5 minutes, turning often, to crisp the skin. Stay right there: the sweet side of the blend browns fast over open flame.
  6. Wings are safe at 165F, but they're better at 175-185F, when the fat has rendered and the meat pulls off the bone.
  7. Give them a light second dusting of seasoning right off the grill if you want more kick. Serve hot.

Why it works

Sweet and heat in one blend means the glaze and the kick land on the skin together, no sauce required. Slow, indirect heat renders the fat, and a quick finish over the fire sets the seasoning without scorching it.
