Reverse-Seared Garlic Pepper Ribeyes
Slow on the cool side, then a hard sear over the fire. Edge-to-edge pink with a peppery crust.

A thick ribeye doesn't need much, just salt, pepper, garlic, and the right heat. Reverse searing cooks it gently first and sears it last, so it's pink from edge to edge. It's an easy way to cook a steakhouse-style steak at home.
Ingredients
Serves 4. Time: about 1 hour, plus up to a day to dry-brine.
- 2 ribeye steaks, bone-in or boneless, 1 1/2 inches thick (about 1 1/4 lb each)
- Frisco Garlic Pepper Seasoning, a good even coat on all sides
- 1 tablespoon butter per steak, optional, for finishing
The blend already has salt, so taste before adding more.
Steps
- Season the steaks on all sides with Garlic Pepper. For a better crust, do it 1-24 hours ahead and leave them uncovered on a rack in the fridge.
- Set up the grill for two-zone heat. Get the cool side around 250F.
- Cook the steaks on the cool side with the lid closed until the center reads 10-15F below your target, about 115-120F for medium-rare. That takes 25-40 minutes, depending on thickness.
- Pull them off. Open the vents or crank the burners to get the hot side as hot as it will go, then sear 1-2 minutes per side until a dark crust forms. There's a little brown sugar in the blend, so don't walk away.
- Final doneness:
- Medium-rare: 130-135F
- Medium: 140-145F
- The USDA safe minimum for beef steaks is 145F with a 3-minute rest.
- Top each steak with a pat of butter if you like. Rest 5-10 minutes and slice against the grain.
Why it works
