Crispy Montana Ranch Smashed Potatoes

Boiled, smashed flat, and roasted until the edges shatter. Montana Ranch seasons both the potatoes and the dip.

Crispy smashed potatoes roasted golden on a sheet pan

Smashed potatoes have creamy middles and crackly edges. Montana Ranch seasons the potatoes and doubles as the dip. They go with everything from steak to meatloaf.

Ingredients

Serves 6 as a side. Time: about 1 hour.

  • 2 lb small gold or red potatoes, 1 1/2 to 2 inches across
  • 3 tablespoons olive oil, divided
  • 2 tablespoons melted butter
  • Frisco Montana Ranch Seasoning, a generous shake
  • Chopped chives or green onion
  • For the dip: 1 cup sour cream or plain Greek yogurt, with Montana Ranch stirred in to taste

The blend already has salt, so taste before adding more.

Steps

  1. Put the potatoes in a pot, cover with cold water by an inch, and bring to a boil. Simmer until a fork slides in easily, 15-20 minutes. Drain and let them steam-dry 5 minutes.
  2. Heat the oven to 425F. Brush a sheet pan with 1 tablespoon of the olive oil.
  3. Set the potatoes on the pan with space between them. Press each one flat with the bottom of a glass or a potato masher, to about 1/2 inch thick, until the edges crack.
  4. Drizzle with the rest of the oil and the melted butter, then season well with Montana Ranch.
  5. Roast 25-35 minutes, until the edges are deep brown and crispy. No need to flip.
  6. While they roast, stir Montana Ranch into the sour cream a little at a time until it tastes right, and chill.
  7. Sprinkle the potatoes with chives and serve with the dip.

Why it works

Buttermilk, garlic, onion, dill, and parsley are the classic ranch flavors, and a little smoked paprika rounds it out. Those crispy, craggy edges catch every bit of it.

Pair it with

For the garlic lovers: Roasted Garlic Ranch Seasoning brings buttermilk, roasted garlic, and sweet red pepper to popcorn, chips, chicken, and vegetables.
