Tuck a note in that says what to make first. Here's the order I'd hand a new processor:

  1. Mild Jerky, the brine method. Slice lean meat 1/4 inch thick and soak it 12 hours in the fridge in the seasoning, cure pack and distilled water. Easiest win in the box. Our Mild Venison Jerky recipe walks through it.
  2. Pepper Sticks once they've got the smoker figured out. Start with our Deer Camp Pepper Sticks.
  3. Hot Jerky for the second batch. Same method and ratio as the Mild.
  4. Hickory bacon when there's a pork belly in the freezer. Follow the directions on the label.
