- 1 lb ground pork
- Frisco Southern Style Breakfast Sausage Seasoning: the label's amount for 1 lb of pork
- 1 pan (9x13) cornbread, crumbled into about 10-12 cups and left out overnight to dry
- 4 tablespoons butter, plus more for the dish
- 1 large onion and 3 ribs celery, diced
- 2 large eggs
- 2-3 cups low-sodium chicken broth
- Black pepper
Steps
- Mix the ground pork with the seasoning, using the amount on the label.
- Brown the sausage in a large skillet, breaking it up, until no pink remains and it reaches 160F. Move it to a big bowl with the crumbled cornbread.
- Melt the butter in the same skillet and cook the onion and celery until soft, about 8 minutes. Add them to the bowl.
- Beat the eggs with 2 cups of the broth and pour it over the cornbread. Fold gently, adding more broth until the stuffing is moist but not soupy. Season with pepper.
- Heat the oven to 350F. Spread the stuffing in a buttered 9x13 dish.
- Bake covered with foil 30 minutes, then uncover and bake 15-20 minutes more, until the top is crisp and the center reads 165F.
- Make ahead: You can bake the cornbread, cook the sausage and vegetables, and refrigerate them separately a day ahead. Add the eggs and broth right before baking.
Safety note: We bake this stuffing in its own dish instead of inside the turkey. USDA says stuffing cooked inside a bird has to reach 165F in the center, and by the time it does, the breast is often overcooked. Baking it separately is easier to get right.
