Mom's Sunday Soup with Mini Italian Meatballs

Ingredients

  • 1 Mom's Sunday Soup kit
  • 6 cups water
  • For the meatballs: 1 lb ground pork (or half pork, half beef), "Frisco Robust" Italian Sausage Seasoning (use the amount on the label), 1 egg, 1/3 cup dry breadcrumbs, 2 tablespoons milk, and 2 tablespoons grated Parmesan
  • Grated Parmesan for serving

Steps

  1. Heat the oven to 400F and line a sheet pan with foil.
  2. Mix the meatball ingredients gently and roll into 1-inch balls (about 30).
  3. Bake 12-15 minutes, until browned and 160F in the center.
  4. Meanwhile, make the soup on the stovetop: add the kit to 6 cups of water in a large pot, bring to a boil, stir, then cover and simmer 25-35 minutes, stirring now and then.
  5. Add the cooked meatballs for the last 5 minutes to heat through.
  6. Ladle into bowls and top with Parmesan. The product page also gives pressure cooker and crockpot directions if you'd rather set it and walk away.
  7. Refrigerate leftovers within 2 hours and reheat to 165F. The orzo soaks up broth, so add a splash of water when reheating.
