Friday Night Sheet Pan Pizza with Homemade Sauce

  • 2 lb pizza dough, store-bought or homemade, at room temperature
  • 3 tablespoons olive oil, divided
  • For the sauce: 1 can (15 oz) tomato sauce, 1 clove garlic (minced), and Pizza Seasoning to taste (start small, per the product page)
  • 1 lb low-moisture mozzarella, shredded
  • 4 oz provolone, shredded
  • Toppings: 1 lb bulk Italian sausage, or sliced pepperoni, plus sliced green pepper and onion

Steps

  1. Brush a 13x18-inch rimmed sheet pan with 2 tablespoons of the olive oil. Press and stretch the dough toward the corners. If it springs back, cover it and let it rest 10 minutes, then stretch again.
  2. Heat the oven to 475F with a rack in the lowest position.
  3. Warm the last tablespoon of oil in a small pan and cook the garlic 30 seconds. Add the tomato sauce and simmer 10 minutes. Stir in a small amount of Pizza Seasoning, taste, and add more until it's where you like it.
  4. If you're using raw sausage, brown it in a skillet until it's no longer pink and reaches 160F. Drain well.
  5. Spread the sauce over the dough, leaving a thin edge. Top with the cheeses, then the meat and vegetables. Sprinkle a little Pizza Seasoning over the top, as the product page suggests.
  6. Bake 15-20 minutes, until the cheese is browned in spots and the bottom is golden when you lift a corner.
  7. Let it rest 5 minutes, then cut into squares.

Sweet Italian Sausage Seasoning. If you grind your own, the product page gives a 25 lb pork trim batch with 2 cups of water, and bulk sausage from it is made for the top of this pizza.
